    In this article, I will review a 2021 Tai Ping Hou Kui Green Tea from Yunnan Sourcing.

    Tea Specifications

    Brand: Yunnan Sourcing
    Tea: Tai Ping Hou Kui
    Tea Varietal: Shidaye Cha
    Vintage: April, 2021
    Elevation: 300 Meters
    Origin: Hou Gang village, Anhui, China

    Review

    These are some beautiful Tai Ping Hou Kui tea leaves which certainly leave an impression upon the eyes.

    They are long, with a lot of white tea fuzz and hydrate almost instantly upon contact with water.

    If you’re looking to impress a guest, then this would be a lovely tea to present to them.

    Amount of Tea: 4 Grams
    Brewing Vessel: Ceramic Gaiwan
    Type of Water: Bottled Water (Reverse Osmosis)
    Steep Time: 30 Seconds – 30 Seconds – 30 Seconds

    This tastes extremely green, with a lot of tree nut, umami and a bit of sweetness.

    It certainly tastes a bit grassy, but it’s more reminiscent of spring dew and the tea has a bit of a cooling effect.

    It becomes more floral in later steeps.

    Very refreshing on the palette.

    A lingering taste on the tongue, without much of the astringency which green tea is often known for.

    Flavor notes: Green vegetation, cut grass, tree nuts, umami, fresh bamboo, and orchids, with a general sweetness.
